Bong Paya Curry


Bong Paya Curry - Paya is curry is usually enjoyed as breakfast or lunch to give the stomach time to digest it. But when we add bong to paya curry, we put a crown on delicious paya curry.




Ingredients

For Paya Curry:
Beef paya 1 pair (preferably front ones)
Water 12 cup
Ginger garlic paste 2 tbsp
Turmeric 1 tsp
Coriander powder 2 tbsp
Salt to taste
Red chili 1 tbsp
Red chili powder 1 tbsp
Sliced onion 1 (large)
Curd 1/2 cup or 4 tbsp (optional)
For Bong:
Bong 1 kg
Water 5 glass
Onion 1
Garlic 1
Ginger 1 inch piece
Bay leaves (Tez pat) 2 leaves
For Final Touch:
Saffron all spice 1-2 tbsp
Aniseed (powder) 2 tsp

Cooking Directions

1. For Paya: Soak paya in warm water for half an hour and clean them with the brush to remove the hair.
2. Take a big pan and pour water into it and put paya into it and boil. (Make sure that paya are fully dipped in 
     (water)
3. Add ginger garlic paste, turmeric, salt, red chili, red chilies, coriander powder and a sliced onion to the
    water, boil it.
4. Add curd. Cover and boil. (Don't use too much curd as it will spoil the taste and texture)
5. When it comes to boil, cover and cook on very low flame.
6. For Bong: In a pan pour 5 glass water and add meat to it.
7. In a muslin combine 3 ginger slices, onion, and whole garlic and put it in pan.
8. Put 2 bay leaves in the pan also, cover and cook.
9. When ready, takeout the muslin .
10. Now pour whole of the Bong curry in to the pan of Paya curry (when paya curry is almost done and is   
      boiling on low flame).
11. Combine both the bong and paya.
12. In the end add saffron all spice and aniseed powder.
13. Garnish and serve with golden brown onion, lemon slices, green chili, chopped coriander, julienne ginger
      and hot naan.

Baked Beef Crepes

Crepes can be defined as thin French pancakes. Now crepes can be simple enough to be an appetizer or a snack or stuffed enough to be a main meal. Try out this deliciously cheesy recipe of crepes.




Ingredients



Beef undercut 300 grams
Egg 1 (beaten)
Spring onion 1 stalk (finely sliced)
Carrot 1 (finely sliced)
Refined flour 1 cup
Milk 1 cup
Onion ½ (finely sliced)
Mozzarella cheese 250 grams
Black pepper 1 tbsp (crushed)
Salt to taste
Oil as required


Cooking Directions



1. Cut undercut into fine strips.
2. Mix refined flour, egg and milk in a bowl.
3. Grease non-stick frying pan, pour a little batter in it enough to cover the pan thinly, cook 
    both sides and remove     
4. Repeat process with remaining mixture.
5. Heat 3 tbsp of oil in a wok, add onion and undercut and cook.
6. When meat is tender, add black pepper, spring onion, carrot and salt, cook for few minutes 
    and  remove.     
7. Put some prepared mixture on one side of crepes and roll.
8. Place all rolls in baking tray, sprinkle cheese on top.
9. Bake at 200°c in pre-heated oven for 10 minutes, remove and serve.

Dry Beef Chilli

A simple and quick recipe of dry beef chilli that is going to give you the taste of authentic Chinese food.








Ingredients


Beef undercut cut in thin strips 450 gm (1 piece)
Oil 1/4 cup
Onions 2 (sliced thickly)
Green chilies 2 (sliced thinly)
Chinese Salt 1/2 tsp
Salt 1/3 tsp
Black pepper 1/2 tsp
Chile Garlic sauce 1 tsp
For Marination:
Ginger/garlic paste 1+1 tsp
Salt 1/2 tsp or to taste
Pepper 1/2 tsp
Vinegar 3 tsp
Tenderizer 1 tsp


Cooking Directions


1. Marinate the sliced beef in all the ingredients of marinade and leave aside for 2 hours.
2. Heat oil, fry the marinated meat and cook till the water dries.
3. Then add the onions and fry for sometime till soft then add the chilies and all the seasoning.
4. Serve with garlic-fried rice.

Chinese Dry Beef Chilli

Super hot and fragrant Chinese dry beef chili. Serve hot with boiled noodles or steamed rice.






Ingredients



Beef undercut 1, 1/2 kg (cut into large pieces, frozen for 1-2 hours)
Green chillies 15 (sliced thinly, lengthwise)
Garlic 8, cloves peeled and crushed
Black pepper 1 tsp, crushed
White pepper 1 tsp, powdered
Sugar 1 tsp
White flour (chicken) 1 tsp
Corn flour 1 tsp
Soya sauce 2 tbsp
White vinegar 2 tbsp
Salt to taste
Sesame seed oil (Chinese) few drops
Oil 4 tbsp


Cooking Directions



1. Remove meat from freezer and cut into thin slices.
2. Marinate the meat in a mixture of all ingredients except the oil and green chillies and leave for an hour.
3. Just before serving, heat oil in a wok till very hot and stir fry the meat.
4. In a separate pan stir-fry the green chillies and add to meat.
5. Sprinkle the sesame oil on top and serve hot.

Potato puffs


Potato puffs is one recipe that can be your appetizer, side dish or snack. Your kids will simply love it. Potato puffs can also be prepared with left over potatoes.







Ingredients
 Eggs 2
Water ½ cup
Flour ½ cup
Potatoes ½ cup (boiled and mashed)
Salt ½ tsp
Black pepper ½ tsp (crushed)
Red pepper ½ tsp
Coriander leaves 2 tbsp (chopped)
Butter ½ tbsp
Oil for frying

Cooking Directions
1. In a sauce pan, mix water and butter and bring it to a boil.
2. When it starts to boil, add in flour and mix well, remove from flame.
3. Add boiled mashed potatoes, salt, black pepper, crushed red pepper and coriander.
4. Mix well, add in eggs one at a time, mixing well.
5. Heat oil, drop a tablespoonful of potato mixture and deep fry puffs.
6. Serve immediately with chutney.
